Ingredients

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup extra virgin olive oil

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup (for a vegan option)

1 clove garlic, minced

Salt and freshly ground black pepper, to taste

1 teaspoon finely grated lemon zest

Optional: 1 tablespoon fresh herbs (such as parsley, basil, or thyme), finely chopped

Instructions

In a medium bowl, whisk together the lemon juice, Dijon mustard, honey (or maple syrup), and minced garlic until well combined.

Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing.

Add the salt, pepper, and lemon zest to taste, whisking again to incorporate.

If using, stir in the fresh herbs for added flavor.

Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to suit your preference.

Transfer the dressing to a clean jar or airtight container and let it rest for at least 15 minutes to allow the flavors to meld before serving.

Prep Time: 10 minutes | Total Time: 25 minutes | Servings: Makes about 3/4 cup
