4 large eggs

1 ripe avocado, diced

1 cup bell peppers (red, yellow, and green), chopped

1 small zucchini, diced

1 small red onion, diced

2 tablespoons olive oil

1 teaspoon ground cumin

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon smoked paprika (optional)

4 large lettuce leaves (for wrapping)

Fresh cilantro or parsley, for garnish (optional)

Salsa, for serving (optional)

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 2-3 minutes until it begins to soften.
