8 large eggs

1 cup egg whites

1 cup cooked black beans, drained and rinsed

1 cup diced bell peppers (mixed colors for a vibrant look)

1 cup diced onion

1 cup chopped fresh spinach

1 cup diced cooked chicken breast (or turkey for a leaner option)

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

8 whole wheat or high protein tortillas

1 cup reduced-fat shredded cheddar cheese

Salsa and avocado for serving (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Egg Mixture: In a large bowl, whisk together the eggs, egg whites, cumin, chili powder, salt, and pepper until well combined.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of cooking spray or a drizzle of olive oil. Sauté the diced onion and bell peppers until soft, about 5-7 minutes. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

        Combine Ingredients: In the same bowl as your egg mixture, stir in the sautéed vegetables, black beans, and cooked chicken until evenly distributed.

          Bake the Egg Mixture: Pour the egg mixture onto the prepared baking sheet, spreading it evenly. Bake in the oven for about 20-25 minutes, or until the eggs are set and cooked through.
