Ingredients

2 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 ounces fettuccine or pasta of choice

Fresh basil leaves, for garnish

Crushed red pepper flakes, optional (for a spicy kick)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the cherry tomatoes and Italian seasoning, cooking until the tomatoes are softened, about 3-4 minutes.

Add Cream and Broth: Lower the heat and carefully stir in the heavy cream and chicken broth. Bring to a simmer and let cook for another 3-5 minutes, allowing the sauce to thicken slightly.

Combine Pasta and Sauce: Stir in the grated Parmesan cheese, mixing until melted and combined. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency. Fold in the cooked pasta and sliced chicken, ensuring everything is well coated.

Serve: Plate the pasta and garnish with fresh basil leaves and a sprinkle of crushed red pepper flakes if desired. Enjoy your Marry Me moment with this delightful dish!
