Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust for spice preference)

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

8 oz fettuccine pasta

Fresh basil, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: Begin by cooking the fettuccine according to package instructions in a pot of salted boiling water. Drain and set aside once cooked.

Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and let them rest on a cutting board while you make the sauce.

Create the Sauce: In the same skillet, add the minced garlic, Italian seasoning, and red pepper flakes. Sauté for about 1-2 minutes until fragrant. Add the cherry tomatoes and cook until they begin to soften, about 3 minutes.

Mix in Cream and Cheese: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, stirring until smooth and creamy. Season with more salt and pepper, if desired.

Slice and Combine: Slice the rested chicken and return it to the skillet along with the cooked fettuccine. Toss everything together until the pasta is well-coated with the creamy sauce.

Garnish and Serve: Plate the pasta, garnishing with fresh basil and additional grated Parmesan cheese. Serve immediately and enjoy!
