8 oz (225g) fusilli pasta

1 lb (450g) cooked chicken breast, diced

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 clove garlic, minced

1 tsp dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

        Add Dressing: Pour the dressing over the pasta mixture. Toss gently until everything is well coated.

          Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Serve cold or at room temperature.
