Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½ tsp smoked paprika
  • to taste salt and pepper
  • 2 tbsp olive oil
  • 1 cup cooked basmati rice
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ cup fresh parsley chopped
  • ¼ cup tahini
  • 2 tbsp fresh lemon juice
  • ¼ cup water
  • Pita bread for serving (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add finely chopped onion and sauté for about 5 minutes until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add ground beef, breaking it apart as it cooks for 7-10 minutes until browned.
  • Sprinkle in cumin, coriander, cinnamon, smoked paprika, salt, and pepper; mix and cook for another 2-3 minutes.
  • In a small bowl, whisk tahini, lemon juice, and water; adjust thickness with more water if needed.
  • Assemble bowls with a base of basmati rice, topped with seasoned beef, cherry tomatoes, cucumber, and parsley.
  • Drizzle tahini sauce over the top and serve with warm pita bread if desired.
