3 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons milk or cream

1 tablespoon olive oil or butter

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh basil or parsley, chopped (optional)

Sliced tomatoes or avocado (for garnish, optional)

Instructions
 

In a mixing bowl, crack the eggs and add the milk or cream, salt, and pepper. Whisk together until well combined and slightly frothy.

    Heat the olive oil or butter in a non-stick skillet over medium heat until it’s hot but not smoking.

      Pour the egg mixture into the skillet, tilting the pan slightly to spread the eggs evenly. Cook for about 1-2 minutes, letting the edges set while occasionally lifting the sides to allow uncooked eggs to flow to the bottom.

        Once the bottom is set but the top is still slightly runny, sprinkle the diced mozzarella evenly over one half of the omelet. Add fresh herbs if desired.

          Using a spatula, gently fold the omelet over the cheese and herbs. Allow it to cook for another minute until the cheese is melted and the eggs are fully cooked.
