1 can (20 oz) crushed pineapple in juice, well-drained

1 cup heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

8 oz cream cheese, softened

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/2 cup shredded coconut (optional)

Fresh pineapple chunks for garnish (optional)

Mint leaves for garnish (optional)

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press this mixture firmly into the bottom of an 8x8-inch square baking dish to form an even crust. Set aside.
