The origins of custard pies can be traced back to medieval Europe, where the concept of custard as a filling began to take shape. Early recipes featured a mixture of eggs, milk, and sugar, encased in a pastry crust. Over time, variations emerged, with different regions adding unique flavors and ingredients. The word "custard" itself is derived from the Old French term "croustade," which refers to the crust that encases the creamy filling.

Ingredients

2 cups whole milk

3 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground nutmeg (plus extra for sprinkling)

1 pre-baked 9-inch pie crust

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Custard Mixture: In a medium saucepan, heat the milk over medium heat until it’s steaming but not boiling. Remove from heat.

Mix Eggs and Sugar: In a mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, salt, and ground nutmeg until well combined.

Combine: Gradually add the hot milk to the egg mixture, whisking continuously to avoid cooking the eggs.

Strain: For a smoother texture, strain the custard mixture through a fine sieve into a measuring cup or bowl. This will remove any curdled bits of egg.

Pour into Pie Crust: Carefully pour the custard mixture into the pre-baked pie crust.

Bake: Bake in the preheated oven for 45 to 50 minutes, or until the custard is set and a knife inserted in the center comes out clean. The top should be slightly puffed and golden.

Cool and Serve: Allow the pie to cool to room temperature before slicing. For an extra touch, sprinkle some additional ground nutmeg on top before serving.

Enjoy: This pie is perfect served chilled or at room temperature, making it a delightful dessert for any occasion!
