1 lb (450g) boneless, skinless chicken thighs

1 cup long-grain rice (white or brown)

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce (your favorite variety)

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons olive oil

Chopped green onions for garnish (optional)

Marinate the Chicken: In a bowl, combine honey, BBQ sauce, soy sauce, garlic powder, onion powder, paprika, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

    Sear the Chicken: Heat olive oil in a large skillet or a deep pan over medium-high heat. Remove the chicken from the marinade (reserving the marinade), and add it to the skillet. Sear for about 5-6 minutes on each side until browned. Remove the chicken from the pan and set aside.

      Toast the Rice: In the same pan, add the uncooked rice. Toast for 2-3 minutes, stirring frequently, until the rice is slightly golden.

        Combine Ingredients: Pour in the chicken broth and add the reserved marinade. Stir well to combine, then bring the mixture to a gentle simmer.
