Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

8 oz (225g) egg noodles

3 tablespoons honey

4 cloves garlic, minced

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cups chicken broth

1 cup broccoli florets (fresh or frozen)

1/2 red bell pepper, sliced

1/2 teaspoon black pepper

2 tablespoons green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Sear the Chicken: In a large pot or Dutch oven, heat the sesame oil over medium-high heat. Add the chicken pieces and season with black pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pot and set aside.

Prepare the Sauce: In the same pot, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the honey, soy sauce, rice vinegar, and chicken broth. Stir well to combine.

Add Noodles and Vegetables: Bring the sauce to a boil, then add the egg noodles, broccoli florets, and sliced red bell pepper. Stir everything together, ensuring the noodles are submerged in the broth.

Cook the Noodles: Reduce heat to medium-low, cover the pot, and let it simmer for about 10 minutes, stirring occasionally, until the noodles are cooked and have absorbed most of the sauce. If needed, add more broth or water to ensure the noodles cook evenly.

Combine and Serve: Once the noodles are tender and the sauce has thickened, return the cooked chicken to the pot and fold it into the noodles. Cook for an additional 2-3 minutes until everything is heated through.

Garnish and Enjoy: Remove from heat, garnish with sliced green onions and sesame seeds. Serve warm and enjoy your delicious one-pot honey garlic chicken and noodles!
