1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 cup low-sodium chicken broth

1 cup heavy cream

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

1 teaspoon dried thyme

1 teaspoon dried oregano

16 oz (450g) potato gnocchi

1 cup spinach, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken thighs, season with salt and pepper, and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Veggies: Mix in the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.

        Combine Broth and Seasoning: Pour in the chicken broth, heavy cream, lemon juice, lemon zest, dried thyme, and oregano. Stir well to combine all the ingredients and bring to a simmer.

          Add Gnocchi: Once the mixture is simmering, add the gnocchi to the pot. Cook according to the package instructions, usually about 2-3 minutes, until they float to the top.

            Incorporate Spinach & Chicken: Add the cooked chicken back into the pot along with the chopped spinach. Stir gently until the spinach wilts, approximately 2 minutes.
