  • 3 medium potatoes
  • 2 medium carrots
  • 1 medium onion
  • 1 cup dashi stock
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon granulated sugar
  • 2 tablespoons vegetable oil
  • 2 green onions finely chopped for garnish
  • to taste shichimi togarashi optional
