4 cups mixed greens (spinach, arugula, and romaine)

2 large oranges, segmented

1 cup mandarin oranges, drained

1/2 cup freshly chopped mint

1/2 cup sliced almonds, toasted

1/4 cup feta cheese, crumbled

1/3 cup plain Greek yogurt

2 tablespoons honey

1 tablespoon fresh orange juice

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the mixed greens, orange segments, mandarin oranges, and chopped mint. Toss gently to distribute the ingredients evenly.

    In a small bowl, whisk together the Greek yogurt, honey, fresh orange juice, and apple cider vinegar until smooth and creamy. Season with salt and pepper to taste.

      Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients well.
