Ingredients

1 loaf of brioche bread, cut into thick slices

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup sugar, divided

2 teaspoons vanilla extract

1 teaspoon almond extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup granulated sugar (for caramelizing)

Fresh berries (for garnish, optional)

Instructions

Prep the Bread: Arrange the brioche slices in a single layer in a 9x13-inch baking dish. You can slightly overlap them if necessary.

Make the Custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, 3/4 cup of sugar, vanilla extract, almond extract, ground cinnamon, and salt until well combined.

Soak the Bread: Pour the custard mixture evenly over the brioche slices, ensuring each slice is well saturated. Cover the baking dish with plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the bread to soak up the custard.

Bake: Preheat your oven to 350°F (175°C). Remove the plastic wrap and bake the French toast for 30-35 minutes, or until it is golden brown and puffed up.

Caramelize the Sugar: Once baked, remove the French toast from the oven and let it cool slightly. Sprinkle the remaining 1/4 cup of granulated sugar evenly over the top. Using a kitchen torch, melt the sugar until it bubbles and forms a crispy, caramelized layer. If you don't have a torch, you can place it under a broiler for 2-3 minutes—watching closely to avoid burning.

Serve: Slice and serve warm, garnished with fresh berries if desired. Enjoy your decadent Overnight Crème Brûlée French Toast!
