Ingredients

1 loaf of challah or brioche bread, cut into 1-inch cubes

8 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

A pinch of salt

1/2 cup maple syrup (plus more for serving)

1 cup fresh blueberries (optional)

Powdered sugar for dusting (optional)

Butter for greasing the casserole dish

Instructions

Prepare the Baking Dish: Grease a 9x13-inch baking dish with butter and set it aside.

Combine Bread Cubes: In a large mixing bowl, add the cubed challah or brioche. If using blueberries, sprinkle them evenly over the bread cubes.

Mix Wet Ingredients: In another bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, salt, and maple syrup until well combined.

Combine Mixtures: Pour the egg mixture over the bread cubes evenly, ensuring all the bread is soaked. Gently press the bread down with a spatula to ensure it absorbs the liquid fully.

Cover and Refrigerate: Cover the casserole dish tightly with plastic wrap and refrigerate overnight (or at least for 4-6 hours) to allow the bread to soak up the mixture.

Preheat Oven: The next morning, preheat your oven to 350°F (175°C).

Bake: Remove the plastic wrap and bake the casserole for 45-55 minutes, or until it’s puffed up and golden brown on top.

Cool and Serve: Let it cool for about 10 minutes before slicing. Dust with powdered sugar if desired and serve with extra maple syrup.

Enjoy: Each slice is a warm, comforting hug perfect for a leisurely brunch!
