Ingredients

1 cup coarsely ground cornmeal (polenta)

4 cups vegetable or chicken broth (or water)

1 tablespoon unsalted butter

1/2 cup grated Parmesan cheese (optional)

1/2 cup heavy cream or milk

Salt, to taste

Freshly cracked black pepper, to taste

Fresh herbs (such as parsley or basil), for garnish

Optional toppings: sautéed mushrooms, roasted vegetables, or tomato sauce

Instructions

Prepare the Broth: In a large pot, bring the vegetable or chicken broth to a boil over medium-high heat. If using water, you can add a pinch of salt to enhance flavor.

Whisk in Polenta: Gradually whisk in the cornmeal (polenta) to the boiling broth, ensuring there are no lumps.

Cook the Polenta: Continue to stir continuously for about 5 minutes until the mixture thickens. Turn the heat to low and cover. Let it simmer for an additional 20-30 minutes, stirring occasionally to prevent sticking.

Add Cream and Cheese: Once the polenta is creamy and cooked through, stir in the heavy cream or milk, butter, and Parmesan cheese (if using). Mix well until fully combined and creamy.

Season to Taste: Add salt and freshly cracked black pepper to taste. Adjust the consistency with more broth or cream if it’s too thick.

Serve: Spoon the creamy polenta onto plates, and top with your choice of sautéed mushrooms, roasted vegetables, or a dollop of your favorite tomato sauce. Garnish with fresh herbs.

Enjoy: Serve immediately while warm, and enjoy the delightful creaminess of your homemade polenta!
