  • 1 cup fresh spinach finely chopped
  • 1 cup frozen spinach fully thawed and well-drained
  • 1 cup cream cheese softened to room temperature
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)
  • Tortilla chips baguette slices, or vegetable sticks (for serving)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine fresh spinach, thawed frozen spinach, cream cheese, sour cream, mayonnaise, half of the Parmesan, mozzarella, garlic, onion powder, and red pepper flakes. Season with salt and pepper.
  • Mix until well blended and creamy.
  • Transfer the mixture to a greased 9x9 inch baking dish, spreading evenly.
  • In a separate bowl, mix panko breadcrumbs with the remaining Parmesan and olive oil until coated.
  • Sprinkle the breadcrumb mixture over the spinach dip evenly.
  • Bake for 25-30 minutes until golden brown and bubbling.
  • Allow to cool for a few minutes, then garnish with parsley before serving.
  • Serve warm with tortilla chips, baguette slices, or vegetable sticks.
