Peaches and Cream Cheesecake Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup granulated sugar, divided

16 oz cream cheese, softened

2 large eggs

1 tsp vanilla extract

1 cup sour cream

2 cups fresh peaches, peeled and diced

1 tbsp lemon juice

1 tsp ground cinnamon

¼ tsp salt

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with cooking spray.

    In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until the texture resembles wet sand. Press this mixture firmly into the bottom of the prepared baking dish to form the crust.

      Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.

        In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add the remaining ¾ cup of sugar and mix until well combined.

          Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until smooth and creamy.

            In a separate bowl, toss the diced peaches with lemon juice, cinnamon, and salt. Gently fold the peach mixture into the cream cheese batter until evenly combined.

              Pour the peach and cream cheese mixture over the cooled crust, spreading it evenly with a spatula.

                Bake the bars in the oven for 35-40 minutes or until the center is set and slightly jiggly (it will firm up as it cools).

                  Once baked, turn off the oven and crack the oven door, allowing the cheesecake bars to cool gradually for about 30 minutes.

                    After cooling, refrigerate the bars for at least 4 hours, or overnight for best results. Once chilled, cut into squares and serve. Enjoy your refreshing treat!
