1.5 lbs flank steak, sliced into strips

2 tablespoons vegetable oil

1 large onion, sliced

3 bell peppers (red, green, and yellow), sliced

4 cloves garlic, minced

1 cup beef broth

1/4 cup soy sauce

2 tablespoons Worcestershire sauce

2 tablespoons cornstarch (optional, for thickening)

1 tablespoon brown sugar

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt to taste

Cooked rice or noodles for serving

Chopped green onions for garnish (optional)

Instructions
 

Prepare the Steak: Heat the vegetable oil in a skillet over medium-high heat. Add the sliced flank steak and sear for about 3-4 minutes until browned. Transfer to the crock pot.

    Sauté the Vegetables: In the same skillet, add the sliced onions and bell peppers, sautéing for 2-3 minutes until slightly softened. Add the minced garlic and cook for an additional minute. Transfer the veggies to the crock pot.

      Mix the Sauce: In a bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, brown sugar, black pepper, garlic powder, and onion powder. Pour this mixture over the steak and vegetables in the crock pot.

        Cook Low and Slow: Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender and fully cooked.

          Thicken the Sauce (Optional): If you prefer a thicker sauce, mix the cornstarch with a little water to create a slurry, then stir it into the crock pot during the last 30 minutes of cooking.

            Serve: Once cooked, taste and adjust seasoning with salt if needed. Serve the delicious pepper steak over cooked rice or noodles and garnish with chopped green onions if desired.
