Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon dried oregano

1 teaspoon chili powder

Salt and pepper to taste

Juice of 2 limes

For the Creamy Green Sauce:

1 cup fresh cilantro leaves

1/4 cup mayonnaise

1/4 cup Greek yogurt

1 jalapeño, seeds removed (adjust to spice preference)

1 clove garlic

Juice of 1 lime

Salt to taste

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together olive oil, minced garlic, cumin, paprika, oregano, chili powder, lime juice, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for more flavor.

Make the Green Sauce: In a food processor, combine the cilantro, mayonnaise, Greek yogurt, jalapeño, garlic, lime juice, and salt. Blend until smooth and creamy. Taste and adjust seasoning if necessary. Transfer to a bowl and refrigerate until ready to serve.

Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting excess drip off. Grill the chicken for about 6-8 minutes per side, or until fully cooked (internal temperature should reach 165°F/74°C). Remove from the grill and let it rest for a few minutes before slicing.

Serve: Arrange the sliced grilled chicken on a platter and drizzle generously with the creamy green sauce. Serve with lime wedges and your favorite side dishes, such as grilled vegetables or a fresh salad.
