Ingredients
  

  • 1 package frozen potstickers
  • 4 cups chicken broth or vegetable broth
  • 1 cup water
  • 2 cups bok choy roughly chopped
  • 1 cup shiitake mushrooms thinly sliced
  • 1 medium carrot cut into thin strips
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic finely minced
  • 1 inch fresh ginger grated
  • 2 green onions thinly sliced for garnish
  • 1 teaspoon chili oil optional
  • to taste salt and pepper

Instructions

  • Heat the sesame oil in a pot over medium heat.
  • Add minced garlic and grated ginger, sauté for 1 minute.
  • Pour in chicken or vegetable broth and water, stir, and bring to a simmer.
  • Add sliced shiitake mushrooms and julienned carrots, cook for 5 minutes.
  • Gently add frozen potstickers, cook for 7 to 10 minutes until heated through.
  • Stir in chopped bok choy and soy sauce, simmer for 2 to 3 minutes.
  • Adjust seasoning with salt, pepper, and chili oil if desired.
  • Ladle soup into bowls and garnish with sliced green onions.
