4 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 1 large lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley for garnish (optional)

Instructions
 

In a large mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper. Whisk until well blended to create a marinade.

    Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 2 hours for maximum flavor.

      Preheat your grill or grill pan over medium-high heat. Ensure the grates are lightly oiled to prevent sticking.

        Remove the chicken from the marinade and let excess marinade drip off. Discard the leftover marinade.

          Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

            Remove the chicken from the grill and let it rest for 5 minutes before slicing. Garnish with fresh parsley if desired.
