  • 1 medium carrot finely diced
  • 1 medium zucchini finely diced
  • 1 can 14 oz diced tomatoes, with their juice
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tsp Italian seasoning blend
  • 1 tsp red pepper flakes optional
  • 8 oz whole wheat lasagna noodles broken
  • 1 cup low-fat cottage cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach roughly chopped
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish optional

Instructions

  • Heat olive oil in a large pot over medium heat and sauté diced onion for 3-4 minutes until translucent.
  • Add minced garlic, diced carrot, and zucchini; cook for an additional 3-4 minutes.
  • Incorporate ground turkey or chicken, breaking it apart as it cooks for 5-6 minutes until browned.

  • Add broken lasagna noodles and cook for 8-10 minutes until tender yet firm.
