  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup unsalted butter softened

  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup granulated sugar for rolling
  • 1 tablespoon ground cinnamon for rolling

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the pumpkin puree, egg, and vanilla extract, mixing until smooth.
