1 cup all-purpose flour

1/2 cup whole wheat flour

2 tablespoons brown sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup canned pumpkin puree

1 cup milk (dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

Instructions
 

Preheat your waffle maker according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In another bowl, mix the pumpkin puree, milk, vegetable oil, eggs, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; some lumps are okay.

          Lightly grease the waffle maker with non-stick spray or a brush of oil.

            Pour an appropriate amount of batter into the preheated waffle maker (refer to your waffle maker instructions for the right amount).

              Close the lid and cook until golden brown and crispy, usually about 4-6 minutes.

                Carefully remove the waffles and keep them warm in a low oven while you repeat the process with the remaining batter.

                  Serve warm with your favorite toppings, such as maple syrup, whipped cream, or a sprinkle of powdered sugar. Enjoy!
