Ingredients
  

1 large cucumber, peeled and chopped

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust to taste)

4 cups cold water

1/4 cup fresh mint leaves (optional for garnish)

Lemon slices (for garnish)

Instructions
 

In a blender, combine the chopped cucumber and 1 cup of cold water. Blend until smooth.

    Strain the cucumber mixture through a fine mesh sieve or cheesecloth into a large pitcher to extract the juice. Discard the pulp.

      Add the freshly squeezed lemon juice and sugar to the cucumber juice. Stir until the sugar is completely dissolved.

        Pour in the remaining 3 cups of cold water and mix well. Taste and adjust sweetness if necessary by adding more sugar.

          Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

            Serve over ice and garnish with fresh mint leaves and lemon slices. Enjoy your refreshing drink!
