Refreshing Rhubarb Lemonade

This easy recipe comes together in just an hour and yields 6-8 servings. Simply boil, steep, strain, and mix to create a vibrant beverage that’s as delicious as it is beautiful. Ingredients
  

2 cups fresh rhubarb, chopped

1 cup sugar

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup fresh mint leaves (optional, for garnish)

Lemon slices (for garnish)

Instructions
 

In a medium saucepan, combine the chopped rhubarb, sugar, and 2 cups of water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the rhubarb breaks down (about 5-7 minutes).

    Once the rhubarb is soft, remove the saucepan from heat and let it steep for 15-20 minutes to enhance the flavor.

      Strain the rhubarb mixture through a fine mesh sieve into a pitcher, pressing down on the solids to extract as much liquid as possible. Discard the solids.

        Add the remaining 2 cups of cold water and the freshly squeezed lemon juice to the rhubarb syrup in the pitcher. Stir well to combine.

          Adjust sweetness by adding more sugar if desired, stirring until dissolved.

            Chill the lemonade in the refrigerator for at least 30 minutes before serving.

              To serve, fill glasses with ice cubes, pour in the rhubarb lemonade, and garnish with lemon slices and fresh mint leaves if using.
