Ingredients

1 cup fresh watermelon, cubed

1 cup unsweetened almond milk (or any milk of choice)

1/4 cup chia seeds

1 tablespoon maple syrup or honey (optional, to taste)

1/2 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves, for garnish

Additional watermelon cubes, for topping

1 tablespoon shredded coconut (optional)

Instructions

Prepare the Watermelon Puree: In a blender, add the cubed watermelon. Blend until smooth to create a watermelon puree. You should have about 3/4 cup of puree.

Mix Chia Pudding: In a bowl, combine the watermelon puree, almond milk, chia seeds, maple syrup (if using), vanilla extract, and a pinch of salt. Whisk everything together until well combined.

Refrigerate: Cover the bowl and place it in the refrigerator for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and swell, creating a pudding-like texture.

Layer the Breakfast Jar: Once the chia pudding is ready, take a glass jar or container. Begin by adding a layer of chia pudding to the bottom. Next, add a layer of fresh watermelon cubes. Repeat the layers until the jar is filled, finishing with a layer of chia pudding on top.

Garnish: Top with fresh mint leaves and shredded coconut, if using. For an extra touch, you can add more watermelon cubes on top for decoration.

Serve and Enjoy: Seal the jar and enjoy this refreshing breakfast either immediately or store it in the refrigerator for up to 2 days.
