Ingredients

1 lb corned beef, sliced thin

2 cups sauerkraut, drained

1 ½ cups Swiss cheese, shredded

1 cup Russian or Thousand Island dressing

1 loaf of rye bread, cut into cubes (about 6 cups)

4 large eggs

2 cups milk

2 teaspoons Dijon mustard

½ teaspoon black pepper

½ teaspoon garlic powder

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

Layer the Bottom: Begin by spreading half of the cubed rye bread evenly at the bottom of the prepared baking dish to create a base layer.

Add Corned Beef: Layer the sliced corned beef evenly over the bread, followed by a generous layer of sauerkraut.

Swiss Cheese Time: Sprinkle 1 cup of shredded Swiss cheese over the sauerkraut for that cheesy goodness.

Repeat Layers: Add another layer of the remaining cubed rye bread, followed by the remainder of the corned beef, another layer of sauerkraut, and finally the rest of the Swiss cheese.

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, Russian or Thousand Island dressing, Dijon mustard, black pepper, and garlic powder until well combined.

Combine & Pour: Pour the egg mixture evenly over the layered ingredients in the baking dish, ensuring all the bread is soaked and covered.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the cheese is bubbling.

Cool & Serve: Allow the Reuben Bake to cool for about 10 minutes before slicing. Garnish with fresh parsley, if desired.

Enjoy: Serve warm either as a hearty main dish or as a party platter!
