4 slices of sourdough bread

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

2-3 jalapeño peppers, roasted and chopped (see roasting instructions)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons butter, softened (for spreading)

Instructions
 

Roast the Jalapeños: Preheat your oven to 400°F (200°C). Line a baking sheet with foil. Place the jalapeños on the sheet and drizzle with olive oil. Roast for about 20-25 minutes, turning halfway through, until the skin is blistered and charred. Once roasted, allow to cool slightly, then peel the skins off and chop the peppers, removing the seeds if desired.

    Prepare the Cheese Mixture: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, shredded pepper jack cheese, chopped roasted jalapeños, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.

      Assemble the Sandwiches: Take two slices of sourdough bread and spread a generous layer of the cheese mixture on one side of each slice. Top with the remaining two slices of bread to form two sandwiches.

        Butter the Bread: Spread softened butter on the outer sides of both sandwiches, ensuring an even coat for that golden crisp.

          Grill the Sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet and grill for about 3-4 minutes on each side, pressing down gently with a spatula until the bread is crispy and golden brown and the cheese is melted.
