Ingredients
  

  • 2 large red bell peppers
  • 1 large yellow bell pepper
  • 1 cup plain kefir
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic finely minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh basil finely chopped
  • ½ teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • Fresh herbs for garnish optional

Instructions

  • Preheat your oven to 450°F (230°C).
  • Slice the bell peppers in half lengthwise, removing seeds and stems.
  • Arrange them cut-side down on a baking sheet lined with parchment paper.
  • Roast the peppers for 20-25 minutes until the skins are blistered and charred.
  • Transfer the roasted peppers to a heatproof bowl and cover to steam for 10 minutes.
  • Peel off the charred skins and roughly chop the pepper flesh.
  • In a mixing bowl, combine the chopped peppers, kefir, olive oil, vinegar, garlic, paprika, oregano, and basil.
  • Pulse the mixture in a food processor until desired texture is reached.
  • Season with salt and black pepper to taste.
  • Transfer to a serving bowl and garnish with fresh herbs if desired.
