Ingredients

1 can of sardines in olive oil (preferably skinless and boneless)

2 slices of whole grain bread

1 tablespoon capers, rinsed and drained

1 small red onion, thinly sliced

1 clove of garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

Fresh parsley, chopped (for garnish)

Sea salt and freshly cracked black pepper, to taste

Extra virgin olive oil (for drizzling)

Instructions

Prepare the Toast: Start by toasting the whole grain bread slices until golden and crispy. You can use a toaster, grill, or oven for this step.

Mix the Dressing: In a small bowl, combine the minced garlic, lemon juice, Dijon mustard, sea salt, and black pepper. Whisk together until well blended.

Prep the Sardines: Open the can of sardines and gently remove them, keeping them whole. Drizzle a little bit of the olive oil from the can over them for extra flavor.

Assemble the Toast: Lay the toasted bread on a serving plate. Spread a tablespoon of the garlic-lemon mixture evenly over each slice.

Layer with Sardines: Arrange the sardines on top of the toasted slices, ensuring they are well-centered and don't fall off.

Add Toppings: Sprinkle the rinsed capers and thinly sliced red onion over the sardines. Drizzle a little extra virgin olive oil on top for added richness.

Garnish and Serve: Finish with a sprinkle of chopped fresh parsley and an additional crack of black pepper if desired. Serve immediately while the toast is warm for the best texture and flavor.
