  • 1 pound ground beef
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 2 cups marinara sauce
  • 1 cup beef broth
  • 1 package 9 ounces refrigerated cheese tortellini
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese divided
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium heat for 5-7 minutes, then drain excess fat.
  • Add diced onion and minced garlic to the skillet, sautéing until the onion is translucent, about 3-4 minutes.
  • Pour in marinara sauce and beef broth, add Italian seasoning, salt, and pepper, and simmer for 5 minutes.
  • Cook cheese tortellini in boiling water according to package instructions, then drain.
  • In a mixing bowl, combine the beef mixture, cooked tortellini, and ricotta cheese.
  • Grease a 9x13 inch baking dish, layer half of the beef and tortellini mixture, and sprinkle with half of the mozzarella.
  • Add the remaining beef mixture, top with the rest of the mozzarella and grated Parmesan.
  • Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is melted and golden.
  • Let cool for a few minutes, garnish with fresh basil, and serve warm.
