Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 15 oz enchilada sauce divided
  • 15 oz black beans drained and rinsed
  • 1 cup corn kernels
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 8 large flour tortillas
  • 2 cups shredded cheese
  • fresh cilantro chopped, for garnish
  • sour cream for serving (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned.
  • Add the diced onion and minced garlic, sauté until the onion is translucent.
  • Stir in black beans, corn, cumin, chili powder, salt, and pepper; cook for 2-3 minutes.
  • Dip each tortilla in half of the enchilada sauce to coat one side.
  • Place a spoonful of the beef mixture and cheese on the sauced side of each tortilla, then roll tightly.
  • Arrange the rolled tortillas seam-side down in a greased baking dish.
  • Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
  • Cover with foil and bake for 20 minutes, then remove foil and bake for another 10 minutes.
  • Garnish with cilantro and serve with sour cream if desired.
