Ingredients
  

  • 1 pound chorizo sausage casings removed
  • 4 medium potatoes peeled and cubed
  • 1 medium onion finely chopped
  • 1 medium bell pepper diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and black pepper
  • to taste fresh parsley chopped

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a skillet, cook the chorizo over medium heat until browned, then set aside.
  • In the same skillet, sauté the cubed potatoes, onion, and bell pepper for 10-12 minutes until tender.
  • Whisk together the eggs, milk, garlic powder, smoked paprika, salt, and black pepper in a bowl.
  • Layer the cooked chorizo, potato mixture, and half of the cheddar cheese in the baking dish.
  • Pour the egg mixture evenly over the layers.
  • Top with the remaining cheddar cheese.
  • Bake for 25-30 minutes until the egg mixture is set and the top is golden brown.
  • Allow to cool for a few minutes before serving, garnished with parsley.
