Ingredients
  

  • 1 pound fresh green beans trimmed and cut into 2-inch segments
  • 1 cup fresh mushrooms sliced
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 cup creamy sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 can condensed cream of mushroom soup
  • 1 cup crispy fried onions for topping
  • to taste Salt and freshly cracked black pepper
  • 1 tablespoon extra virgin olive oil

Instructions

  • Preheat your oven to 350°F (175°C).
  • Blanch the green beans in salted boiling water for 3-4 minutes, then drain.
  • Heat olive oil in a skillet over medium heat and sauté onion and garlic until translucent.
  • Add sliced mushrooms to the skillet and cook until tender.
  • In a mixing bowl, combine blanched green beans, sautéed onion and mushrooms, sour cream, cream of mushroom soup, and half of the cheddar cheese. Season with salt and pepper.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.
  • Top with remaining cheddar cheese and crispy fried onions.
  • Bake for 25-30 minutes until bubbling and golden brown.
  • Allow to cool for a few minutes before serving.

Notes

For a rustic presentation, serve directly from the baking dish.
