2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

3 tablespoons Japanese BBQ sauce (specifically Yakitori sauce)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 medium onion, diced

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, corn)

2 large eggs, lightly beaten

3 green onions, chopped

Salt and pepper to taste

Toasted sesame seeds for garnish

Nori strips for garnish (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with Japanese BBQ sauce and soy sauce. Let it marinate for at least 15 minutes to infuse the flavors.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.

      Sauté Aromatics: In the same skillet, add sesame oil, followed by the diced onion and garlic. Sauté until the onions are translucent, about 2-3 minutes.

        Add Vegetables: Stir in the mixed vegetables and cook for an additional 3 minutes until they're just tender.

          Incorporate Rice: Add the cooked jasmine rice to the skillet. Using a spatula, break apart any clumps and stir-fry the rice with the vegetables for about 3-4 minutes.

            Scramble Eggs: Push the rice and vegetables to the side of the skillet, creating a space. Pour the beaten eggs into the space and scramble them until almost cooked through, then mix them into the rice.

              Combine Everything: Return the cooked chicken to the skillet. Drizzle with additional BBQ sauce if desired, and mix everything together. Cook for another 2-3 minutes to ensure everything is heated through. Season with salt and pepper to taste.

                Garnish: Remove from heat, stir in the chopped green onions, and serve hot. Top with toasted sesame seeds and nori strips for an added touch.
