  • 1 lb ground beef
  • ¼ cup panko breadcrumbs
  • ¼ cup finely chopped green onions
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 large egg
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon gochujang
  • ½ cup mayonnaise
  • 1 tablespoon gochujang
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • a pinch salt

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine ground beef, panko breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, egg, black pepper, salt, and gochujang.
  • Mix the ingredients thoroughly until well combined.
  • Roll approximately 1.5 tablespoons of the mixture into balls and place them on the baking sheet, spaced about one inch apart.
  • Bake for 15-20 minutes until fully cooked and golden brown.
  • In a small bowl, whisk together mayonnaise, gochujang, rice vinegar, sesame oil, honey, and a pinch of salt until smooth.
  • Serve the meatballs warm with the spicy mayo dip.
