1 lb (450g) pork loin, thinly sliced

2 tablespoons fresh ginger, finely grated

4 tablespoons soy sauce

2 tablespoons mirin (sweet rice wine)

1 tablespoon sugar

2 tablespoons vegetable oil

1 small onion, thinly sliced

1 green bell pepper, julienned

1 carrot, julienned

2 green onions, chopped, for garnish

Instructions

In a mixing bowl, combine the grated ginger, soy sauce, mirin, and sugar, stirring until the sugar is fully dissolved. This mixture will serve as your marinade for the pork.

    Add the thinly sliced pork to the marinade, ensuring each piece is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes to enhance the flavor.

      Heat the vegetable oil in a large skillet or frying pan over medium heat.

        Once hot, add the sliced onion and sauté for approximately 2-3 minutes until it becomes slightly translucent, allowing its natural sweetness to develop.

          Introduce the marinated pork to the skillet, reserving the marinade for later use. Cook for about 4-5 minutes, stirring occasionally, until the pork is cooked through and no longer pink.

            Add the julienned green bell pepper and carrot to the pan, sautéing for an additional 2-3 minutes until the vegetables are tender yet retain a bit of crunch.

              Pour the reserved marinade into the skillet, stirring well to combine. Cook for another 2 minutes, allowing the sauce to thicken slightly and glaze the pork and vegetables beautifully.

                Taste the dish and adjust seasoning if needed. Once satisfied, remove the pan from heat.

                  Serve the pork shogayaki warm over a mound of fluffy steamed rice, and finish with a sprinkle of finely chopped green onions for a fresh touch.
