  • 3-4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 medium onion thinly sliced
  • 4 cloves garlic finely minced
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 6-8 French rolls or baguettes

Instructions

  • Remove roast from skillet and set aside.

  • Place seared roast in slow cooker, layer sautéed onions and garlic on top.
  • Pour in beef broth, water, Worcestershire sauce, and soy sauce.
  • Sprinkle dried thyme and rosemary over the mixture.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
  • Shred beef and return to slow cooker, stirring into juices.
  • Assemble sandwiches with shredded beef in rolls, adding cheese if desired.
