Ingredients
  

  • 2 lbs beef steak preferably chuck or sirloin, cut into 1-inch cubes
  • 1 medium onion finely diced
  • 4 cloves garlic minced
  • 1 each red bell pepper diced
  • 1 each green bell pepper diced
  • 2 cans 15 oz each kidney beans, drained and thoroughly rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • to taste salt and black pepper
  • 2 tbsp olive oil
  • to taste fresh cilantro chopped (for garnish)
  • to taste sour cream and shredded cheese for serving

Instructions

  • Sear the steak in olive oil, seasoning with salt and pepper, until browned.
  • Sauté onion, garlic, and bell peppers in the same skillet until softened.
  • Transfer seared steak and sautéed vegetables to the slow cooker.
  • Add kidney beans, crushed tomatoes, beef broth, and spices to the slow cooker.
  • Stir to combine all ingredients well.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Taste and adjust seasonings 30 minutes before serving.
  • Serve in bowls, garnished with cilantro, sour cream, and cheese.
