  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 2 cups fresh spinach finely chopped
  • 1 cup feta cheese crumbled
  • ½ cup cherry tomatoes diced
  • ¼ cup red onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds and membranes.
  • In a mixing bowl, combine quinoa, spinach, feta, tomatoes, onion, garlic, and oregano.
  • Drizzle with olive oil and season with salt and pepper; stir to combine.
  • Fill each bell pepper with the quinoa mixture, pressing down gently.
  • Add a small amount of water to the bottom of the baking dish.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes until peppers are tender.
  • Let cool for a few minutes and garnish with parsley or basil before serving.
