Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cooked quinoa or brown rice

1 mango, diced

1 small red onion, finely chopped

1 jalapeño, finely chopped (optional for heat)

1/2 cup fresh cilantro, chopped

Juice of 2 limes

2 tbsp olive oil

1 tsp chili powder

1 tsp cumin

Salt and pepper, to taste

For Lime-Chili Sauce:

1/4 cup Greek yogurt or sour cream

Zest and juice of 1 lime

1 tsp chili powder

1/2 tsp garlic powder

Salt, to taste

Instructions

Prepare the Mango Salsa: In a bowl, combine diced mango, red onion, jalapeño (if using), cilantro, and juice of one lime. Season with salt and mix well. Set aside to let the flavors meld.

    Cook Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add shrimp, chili powder, cumin, salt, and pepper. Sauté for 3-4 minutes, or until shrimp are pink and opaque. Remove from heat.

      Make Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt (or sour cream), lime zest, lime juice, chili powder, garlic powder, and a pinch of salt until smooth.

        Assemble Bowls: In bowls, layer cooked quinoa or brown rice, followed by sautéed shrimp, diced avocado, and a generous scoop of mango salsa. Drizzle with lime-chili sauce.
