Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp and Bowls:

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

2 cups cooked quinoa or brown rice

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

1 tablespoon mayonnaise

2 tablespoons lime juice

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Prepare the Shrimp:

    - In a bowl, combine the shrimp with lime juice, olive oil, garlic powder, salt, and pepper. Mix well to coat the shrimp evenly.

      - Heat a skillet over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.

        Make the Mango Salsa:

          - In a mixing bowl, combine diced mango, chopped red onion, minced jalapeño (if using), cilantro, lime juice, and salt. Toss well to combine. Set aside.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, mix together Greek yogurt, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper until smooth. Taste and adjust seasoning as needed.
