Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 cups cooked rice
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • ½ cup finely diced onion
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon Old Bay seasoning
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs optional
  • to taste fresh parsley chopped

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat and sauté diced onion and minced garlic until translucent.
  • Add shrimp to the skillet, seasoning with paprika, Old Bay, salt, and pepper. Cook until shrimp are pink and opaque.
  • In a mixing bowl, combine cooked rice, cream of mushroom soup, frozen vegetables, and the shrimp mixture. Stir well.
  • Pour the mixture into a greased 9x13 inch casserole dish, spreading evenly.
  • Sprinkle shredded cheddar cheese on top and add breadcrumbs if desired.
  • Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden brown.
  • Allow to cool slightly, then garnish with chopped parsley before serving.
