2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup milk (or plant-based alternative)

1 large egg

2 tablespoons sugar

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

Pinch of salt

Oil for frying (coconut, vegetable, or your choice)

Optional: powdered sugar for dusting, chopped nuts, or chocolate chips

Instructions
 

In a mixing bowl, combine the mashed bananas, sugar, and vanilla extract. Mix well until smooth and creamy.

    In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.

      Add the dry ingredients to the banana mixture, followed by the milk and egg. Stir until just combined. The batter should be slightly lumpy—avoid overmixing.

        Heat about 1/4 inch of oil in a large skillet over medium heat. You can check if the oil is ready by dropping a small amount of batter into it; if it sizzles, it's hot enough.

          Using a tablespoon or small scoop, drop the batter into the hot oil, spacing them a few inches apart. Fry in batches to avoid overcrowding the pan.

            Cook for about 2-3 minutes on each side, or until golden brown. Flip carefully with a spatula.

              Once fried, remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
