Ingredients

2 lbs boneless, skinless chicken breasts

1 cup salsa (your favorite kind)

1 (10 oz) can diced tomatoes with green chilies

1 (8 oz) package cream cheese

1 cup shredded cheese (cheddar or Mexican blend)

1 packet taco seasoning (about 1 oz)

1/2 cup corn (frozen or canned)

1/4 cup chopped fresh cilantro (for garnish)

Corn or flour tortillas (for serving)

Optional toppings: avocado, sour cream, diced onions, jalapeƱos

Instructions

Prep the Chicken: Place the chicken breasts in the slow cooker. Pour in the salsa, diced tomatoes with green chilies, and taco seasoning, ensuring the chicken is well coated.

Add Cream Cheese: Place the block of cream cheese on top of the chicken and salsa mixture. Do not mix it in at this stage; it will melt during cooking.

Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.

Shred Chicken: Once cooked, use two forks to shred the chicken right in the slow cooker. Stir in the melted cream cheese, ensuring it combines well with the salsa.

Add Cheese and Corn: Stir in the shredded cheese and corn. Allow everything to heat through for an additional 10-15 minutes, until the cheese is melty and the corn is warmed.

Serve: Warm your tortillas and fill them with the queso chicken mixture. Top with fresh cilantro and any additional toppings of your choice, such as avocado, sour cream, onions, or jalapeƱos.

Enjoy: Serve warm and enjoy your cheesy, flavorful tacos!
