  • 4 large sweet potatoes peeled and diced into cubes
  • 1 cup smoked cheddar cheese shredded
  • ½ cup cream cheese softened to room temperature
  • ¼ cup unsalted butter melted
  • ½ cup brown sugar packed
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon sea salt
  • 1 cup mini marshmallows optional for topping
  • ½ cup pecans roughly chopped (for topping)
  • 1 tablespoon olive oil for smoking

Instructions

  • Place cubed sweet potatoes in a large pot, cover with water, and boil for 15-20 minutes until fork-tender.
  • Drain the sweet potatoes and let them cool for a few minutes.
  • Preheat smoker to 225°F (107°C) and drizzle cooled sweet potatoes with olive oil.
  • Smoke sweet potatoes for about 30 minutes until they absorb a rich smoky flavor.
  • In a large bowl, mash smoked sweet potatoes with cream cheese, melted butter, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  • Fold in ¾ cup of smoked cheddar cheese into the sweet potato mixture.
  • Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Pour sweet potato mixture into the dish and spread evenly, then add toppings if desired.
  • Bake for 25-30 minutes until the top is golden brown and bubbly.
