1 cup (225g) unsalted butter, softened

1 1/4 cups (250g) granulated sugar

4 large eggs, room temperature

2 teaspoons pure vanilla extract

3 cups (360g) all-purpose flour, sifted

1 tablespoon baking powder

1/2 teaspoon salt

1 cup (240ml) whole milk, room temperature

Zest of 1 lemon (optional for a citrus twist)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar together on medium-high speed until light and fluffy, about 5-7 minutes.

      Add the Eggs and Vanilla: Add the eggs, one at a time, ensuring each is incorporated before adding the next. Mix in the vanilla extract and lemon zest, if desired, until combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the sifted flour, baking powder, and salt.
